Skillet Ham and Sweets
Makes 4 servings
Ingredients
3 tablespoons minced onion
1/4 cup butter or margarine
2 tablespoons flour
1 can (8 ounces) pineapple tidbits
1/3 cup packed brown sugar
2 cups diced ham
3 cups sliced cooked sweet potato
Directions
Cook onion in the butter 2 to 3 minutes. Blend in flour. Drain syrup from pineapple and add enough water to make 1/2 cup. Gradually add to first mixture and cook, stirring, until thickened. Stir in pineapple, sugar and ham. Arrange sweet potato on top; bring to boil. Cover and simmer 10 minutes, or until thoroughly heated.
