Ham-Orange Rice
Makes 4 servings
Ingredients
3 tablespoons butter or margarine
1 tablespoon finely chopped onion
1/4 cup chopped green pepper
About 2 cups small ham pieces
2 tablespoons brown sugar
1 tablespoon finely shredded orange peel
1/3 cup orange juice
1/4 teaspoon curry powder
2 cups cooked rice
Salt
Directions
Melt butter in medium skillet. Add onion and green pepper and cook, stirring, about 5 minutes. Add ham and brown sugar, stir and continue cooking 3 to 4 minutes. Add remaining ingredient, except salt. Mix well and heat gently. Season with salt to taste.
